INGREDIENTS

– egg yolks –1 tsp white vinegar –2 tbsp chipotle in adobo sauce – 1 garlic clove peeled – 1 tsp lemon juice – 1⅔ cups light olive oil – salt to taste

PREPARING ALL INGREDIENTS

In a mixing jar, combine the egg yolks and grate the garlic on top.

Add the white vinegar.

Add the chipotle in adobo sauce.

And finally add the lemon juice.

Mix all the ingredients with a stick blender to a smooth puree.

With the stick blender running & pressed to the bottom of the mixing jar, slowly add the olive oil.

Continue until all has blended well together into a mayonnaise consistency.

ADDING THE OIL

Adjust seasoning with salt and lemon juice if required.
