Lavosh or lavash is a thin flatbread that originated in the Middle East.

INGREDIENTS

1 ¼ cups plain flour 1 ¼ cups whole wheat flour 1 tbsp black sesame  1 tbsp white sesame  1 tbsp fennel seeds 1 tbsp cumin seeds 1 tbsp caraway seeds 2 tbsp sesame oil 1 cup water sea salt

TOASTING THE SPICES

Toast the fennel, cumin and caraway seeds in a medium hot pan without any oil.

GRINDING THE SPICES

Let the spices cool for 1-2 minutes and grind to a powder consistency with a mortar and pestle or spice grinder.

TOAST THE SEEDS

Toast the sesame seeds the same way but leave them whole.

MIX THE SPICES AND SEEDS

MAKE THE DOUGH

In a bowl add the plain flour, whole wheat flour with water, spices, seeds and sesame oil.

MIX THE DOUGH

Use a hand blender or kitchen aid with the hook attachment to combine everything slowly into a dough.

KNEAD THE DOUGH

Knead the dough on your kitchen surface for a few minutes.

ROLL OUT THE DOUGH

Roll the dough thin making sure it fits the size of your baking tray.

Bake the lavosh at 175°C (350°F) for 15-20 minutes until golden brown and crisp.

Serve as a condiment to cheese
