INGREDIENTS

– 1 medium cabbage  – 1 brown onion  – 2 red apples – 1 orange juiced – 5 floz red vinegar – 6.8 floz red wine – 1.8 oz butter – 2 cinnamon, star anis, bay leaves – 6 cloves – 10 peppercorns – 1 tsp all spice pwd – 1 tsp caster sugar – 1 tspraspberry jam  – salt to taste

SLICING THE RED CABBAGE

Remove the stalk and slice the cabbage thinly on a mandoline or with a sharp knife.

MAKING THE SPICE PARCEL

Make a parcel combining all the spices except the all spice powder in a cheese cloth.

MARINATE THE RED CABBAGE

In a bowl combine the cabbage, the wine, vinegar, orange juice, spice parcel, all spice powder, salt and sugar

MASSAGE WITH YOUR HANDS AND MARINATE FOR AT LEAST 6 HOURS

COOK THE ONIONS AND APPLES

In a wide pot on medium heat, sear the onions and apples in butter for about 5 minutes.

ADD THE RED CABBAGE

Add the cabbage with all the liquid and cover with a lid.

BRAISE THE RED CABBAGE

Bring the cabbage to a boil and cook on low heat covered for 40-45 minutes stirring occasionally.

Finally add the raspberry  jam and adjust the seasoning with salt.

Serve with braised meats, roasted vegetables or eat on it's own
